2 lbs (4 medium) zucchini, trimmed & cut into 1" chunks'
1 T. Extra Virgin Olive Oil
2 T. prepared pesto
Salt & pepper to taste (not included in nutrition info)
Toss zucchini with oil in large bowl. Spread on preheated baking sheet in single layer. Roast until beginning to brown (5-7 min). Turn zucchini and continue to raost until just tender (7-9 min more). Return zucchini to bowl and add pesto and salt & pepper. Toss to coat. Serves 4.
