Mom's Eggs & TomatoesSubmitted by: MAURIZIA
IntroductionMy mom would make this whenever there were extra eggs around. You can lower cals, etc. if you use egg beaters instead of eggs. My mom would make this whenever there were extra eggs around. You can lower cals, etc. if you use egg beaters instead of eggs.
6 eggs, beaten
750 gms canned tomatoes (one small box Pomi tomatoes works great)
1/2 tsp. salt
1/2 tsp. ground black pepper
PAM Olive oil spray
2. Pour in canned tomatoes on low to medium heat, allowing all the liquid to cook off...leaving semi-thick tomato mixture. Add salt & pepper to taste.
3. Beat 6 eggs and add to tomatoes to cook, stirring constantly. (You can use the equivalent egg substitute.)
When eggs are cooked thoroughly, it's done.
You can serve in pita, Italian bread, or in a plate.

That's why I suggest Pomi tomatoes...they have a much lower sodium content than regular canned tomatoes...and you can eliminate the salt to help lower it. Pomi tomatoes was not among choices of ingredients on SP...or use fresh tomatoes that you've peeled & ground.
