IntroductionI found a great recipe for vegetable soup in a weight watchers magazine. I simply altered it a bit to fit my tastes here. Very filling and tasty great for a fall or winter day lunch or dinner! This is a very easy recipe. I found a great recipe for vegetable soup in a weight watchers magazine. I simply altered it a bit to fit my tastes here. Very filling and tasty great for a fall or winter day lunch or dinner! This is a very easy recipe.
2 cups Vegetable broth
1 1/2 cups Spicy V8 juice (12oz travel size bottle)
8-12oz bag mixed veggies (I used a steamfresh bag, and steamed before adding to the soup)
1 small onion, chopped
1 can Garbanzo/Chickpeas, drained and rinsed
Spices of your choosing to your taste (I used paprika, salt and pepper just lightly sprinkled)
Add in Chickpeas, onions, and vegetables. Let simmer till warmed through.
Sprinkle with and seasonings you wish.
Makes 8 small servings 6oz each serve with salad or sandwhich. OR 4 larger servings 12oz each for a whole meal just add crackers and bread to serve with.

Question - do you REALLY use 8 - 12oz bags of mixed veggies? That sounds like a lot of veggies for 3 1/2 cups of liquid. - 3/16/11

It is 8 TO 12oz NOT 8 bags of 12oz verggies lol
