Spiced yogurt & herb lamb

Introduction

Serve with some chapatis and extra natural yogurt.

Number of Servings: 4

Ingredients

    * 125ml natural yogurt (virtually fat free)
    * a large bunch coriander , chopped (including stems)
    * 2 garlic cloves , chopped
    * 2 green chillies , chopped
    * a 1" piece root ginger , peeled and chopped
    * 2 tsp ground cumin
    * 1 tsp ground coriander
    * 0.5 tsp turmeric
    * 500g lamb neck fillets, trimmed of excess fat
    * 1 tomato , chopped
    * onion , thinly sliced
    * a small bunch mint , shredded

Directions

1. Put the yogurt, coriander, garlic, chillies, ginger, cumin and coriander in a food processor and blitz until smooth. Stir in the turmeric and salt to taste. Put the lamb in a dish, pour over all the yogurt and leave to marinate for 1 hour. Cook the lamb over hot coals, (or grill) turning all the time until browned (about 10 - 20 minutes according to how you like your lamb cooked). Rest for 5 minutes.
2. Mix the tomatoes, onion and mint and season. Slice the lamb into pieces and serve with the tomato-mint salad scattered over.
