Ingredients

    1 10 oz. package broccoli
    !/2 cup brown rice
    1 Tbsp. I Can't Believe its not Butter!
    1 Tbsp. Onion
    1/4 C. mushrooms
    1/8 c. flour
    1/4 c. cheddar cheese, diced
    1/2 t. salt
    1 1/2 C. water
    Pepper to taste

Directions

Put rice in pan with water and 1/2 t. salt. Boil 25 minutes. Add broccoli during last 10 minutes of cooking time. While rice is cooking, melt I Can't Believe its not Butter in skillet. Add onions and mushrooms. Cook over low heat until onions are clear and mushrooms are soft. Add flour and stir until smooth. Add milk and cook until slightly thick. Remove from heat. Add cheddar cheese and stir until melted. when rice and broccoli are done, stir cheese sauce into pan. Add pepper to taste. Divide into 4 servings.
