Introduction

This hearty soup is a tasty source of fiber and protein without a lot of calories. This hearty soup is a tasty source of fiber and protein without a lot of calories.

Ingredients

    1 cup dried lentils, rinsed
    1 bunch broccoli
    8 baby carrots, cut to bite size
    1 potato, diced
    1 stalk of celery, diced
    1 bay leaf
    3 cups chicken broth, Equality
    3 cups water

Directions

Remove the flowerettes from the broccoli and cut the stalks into bite size.

Put water, chicken broth, lentils, carrots, potato, celery, broccoli stalks, and bay leaf in a pot and bring it to a boil.

Add the broccoli flowerettes to the soup 10 minutes before serving.

Makes 7 1-cup servings
