I got this recipe from a friend. I just tried it tonight and these were a hit with the whole family. Don't let the beans scare you. You can't taste them and they add fiber. Ingredients

    1 cup northern beans, pureed
    1 1/2 cups sugar
    6 egg whites
    1 1/2 cups pumpkin, canned
    2 1/2 cups whole wheat pastry flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    1 1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1/4 tsp. ginger
    6 tablespoons mini chocolate chips (about 60 grams)

Directions

Beat pureed beans, sugar and egg whites until fluffy. Add pumpkin. Mix dry ingredients in a separate bowl. Add dry ingredients to wet ingredients and mix until well blended. Dough will still be rather wet. Drop by tablespoons onto a nonstick cooking-sprayed cookie sheet. If you'd like them to look more "cookie like," flatten with a spoon. They don't spread and they don't flatten by themselves. Bake at 350 degrees for 13-15 minutes. **I made my cookies too small and ended up with more than 48 cookies, so I'm guessing that you could use a full tablespoon to get the right quantity of cookies.
