Cut kernels from two ears of cold cooked corn. (Raw corn would work too if it's tender and sweet.) Cut 12 or so cherry tomatoes in half. Dice half a bell pepper. Cut one scallion lengthwise and cut in small pieces. Chop 8 leaves of fresh basil. Toss all ingredients with 2T of your favorite vinaigrette (I like Newman's Own Oil and Vinegar) and serve immediately. Very summery, tasty and satisfying!
