Number of Servings: 3

Ingredients

    Cut kernels from two ears of cold cooked corn. (Raw corn would work too if it's tender and sweet.) Cut 12 or so cherry tomatoes in half. Dice half a bell pepper. Cut one scallion lengthwise and cut in small pieces. Chop 8 leaves of fresh basil. Toss all ingredients with 2T of your favorite vinaigrette (I like Newman's Own Oil and Vinegar) and serve immediately. Very summery, tasty and satisfying!

Directions

Makes three servings. If you tossed some leftover chicken or cold rare beef with it, this would also make a good main dish salad -- one large portion or two small ones.
