Red Beans and Rice

Introduction

This is my version of red beans and rice since there are no Popeye´s here where we are.... This is my version of red beans and rice since there are no Popeye´s here where we are....
Number of Servings: 6

Ingredients

    Simple red beans and rice with whatever veggies you have on hand

Directions

Pre soak the red beans or bring to boil in 6 cups water and then let cool for 1-2 hours. Add all the ingredients except for the rice, bring to boil and then simmer on the stove for 1.5 hours. Remove the onion, green pepper and garlic and puree. (I do this for my kids, they won´t eat them if they see them.) Add the veggies back in taste for salt and pepper, adjust if necessary and then add the cup of rice, stir, lower temp and allow the rice to absorb the liquid.
