zucchini custard

Introduction

Kind of like a zucchini omelet. A different way to use that crop of zucchini. Kind of like a zucchini omelet. A different way to use that crop of zucchini.

Ingredients

    1 medium zucchini, shredded
    .5 tsp salt
    1/2 cup grated, lo fat cheese
    2 beaten eggs
    1/4 cup flour
    1 Tbs dried parsley
    pepper to taste
    1 Tbs butter (optional)

Directions

Shred zucchini into a collander. Add salt.
Let sit for 1 hour. Drain and squeeze out the liquid.

Add the rest of the ingredients.
Pour into a sprayed baking pan. I used a 4X4 casserole.
cut butter into small dabs and dot around the top.

I included the butter in the calorie count.

Bake at 350 degrees for 40 minutes.
