IntroductionA delicious source of fiber that is great for a main meal or for sandwiches. This is a modified version from Kellogg's All-Bran recipe. A delicious source of fiber that is great for a main meal or for sandwiches. This is a modified version from Kellogg's All-Bran recipe.
1 tbsp oil
1 large onion, finely chopped
2 cups finely chopped mushrooms (about 8 medium)
8 tbsp dried parsley
1 1/2 cups All-Bran Buds* cereal
3/4 cups chicken stock
2 lbs extra-lean ground chicken
1/2 cup ketchup
2. In medium bowl, stir together cereal and chicken stock. Let stand 2 minutes or until stock is absorbed and cereal softens.
3. In large bowl, combine chicken, egg, and ketchup. Add mushroom mixture and cereal. Mix together until lightly blended.
4. Press mixture into 2 L (9 x 5-inch) loaf pan. Bake at 180ºC (350ºF) for 60 to 75 minutes or until cooked through.
5. Let stand about 15 minutes before slicing. Pour off any accumulated juices.
YIELD: 6 - 1 1/2 inch servings
TIP: If desired, spread 125 mL (1/2 cup) ketchup over top before cooking.
