Baked Italian Meatballs

Introduction

Low fat and delicious! Bring the flavor up and use fresh herbs instead of dried. Reduce sodium by using low sodium chicken broth. Substitute ground turkey or chicken. Low fat and delicious! Ingredients

    1 lb. ground beef, 93% lean
    2 egg whites
    1/2 cup Old Fashioned Oatmeal, ground (not instant)
    1/2 cup chicken broth
    1 tbsp. worchestire sauce
    1 tbsp. tomato paste
    1 tsp. oregano, dried
    1 tsp. basil, dried
    1 tsp. onion powder
    1 tsp. garlic powder

Directions

Coat a baking dish with cooking spray. Put the oatmeal in a food processor or blender and process until the oatmeal is broken down to a coarse mixture. Put all ingredients in a bowl and with clean hands mix together until well combined.

Take a 1/3 cup measure or ice cream scoop, which equals approximately 3 ozs. and with hands form into a ball. Then divide that in half to make 1 1/2 oz. meatballs.

Place raw meatballs into prepared baking dish and bake at 350 degrees for 20 to 30 mins.

Makes approx. 16 meatballs or 8 servings.
