5 cups diced red potatoes
1 small onion, chopped
7 cloves garlic, smashed
4 cups water - or more as needed
2 low-sodium boullion cubes
Salt and pepper to taste
Using an immersion blender or standing blender, puree the soup and return to the crockpot for 10-20 minutes.
