One average sized spaghetti squash
one teaspoon of olive oil
italian seasoning to taste
prepared spaghetti sauce- 1 1/2 cups
one cup shredded part skim mozzarella
garlic to taste
Let cool for at least five minutes. Slice open lengthwise. Remove seeds and stringy thingies...:)
With a fork scoop out the squash into a medium sized saucepan. Add seasoning, oil, and garlic. Cook for 2 minutes. Add spaghetti sauce (this is a great use of some leftover sauce). Heat through. Top with cheese and serve. Serves Four. 1 1/2 to 2 cups servings.
