Egg White Breakfast Casserole

Introduction

This recipe is great to make at the beginning of the week, and freeze/store some in the refrigerator for a quick and healthy breakfast! :) This recipe is great to make at the beginning of the week, and freeze/store some in the refrigerator for a quick and healthy breakfast! :)
Number of Servings: 4

Ingredients

    1 box egg whites (equivalent of 8 eggs)
    8 strips turkey bacon
    1/2 cup pepperjack cheese

Directions

Preheat oven/toaster oven to 350 degrees.
Grill or cook bacon slices, then chop into small squares.
Shred cheese (can substitute part-skim mozzarella, but nutrition info is for pepperjack).
Mix bacon and cheese in a bowl, then pour into a loaf pan.
Pour egg whites into the loaf pan, and mix.
Bake for about 30 minutes, or until toothpick inserted into the center comes out clean (no egg white juices!)

*Mixture should be slightly lower than halfway up the pan, as it will rise A LOT!*

Cut into four servings, and serve immediately or put remaining servings in refrigerator/freezer to enjoy later!

    I used a loaf pan... by the end the egg whites were almost overflowing, but they didn't so don't worry... and I used the loaf pan because it fits in my little toaster oven :)
