Teriyaki Tuna Steaks

Introduction

Tuna, like a good steak, is best at medium-rare. Be sure to buy sushi-grade tuna, and pass if the fish counter smells fishy or briney, or if the tuna steaks on display do not appear moist and fresh. Ingredients

    Fresh Bluefin Tuna, 4 steaks, about 3 oz each
    Teriyaki Sauce, about 1/2 cup (marinade only)
    balsamic vinegar, 1 tablespoon (marinade only)
    water, 1 tablespoon (marinade only)
    Asian grill seasoning, about 1 tablespoon
    Brown Sugar, .25 tsp packed (marinade only)
    Garlic powder, 1 tsp (marinade only)
    Olive oil, 2 tbsp

Directions

Blend together all ingredients except fish. Place in shallow dish or ziplock bag; add fish, and marinade refrigerated for about 30 minutes. Take dish out of refrigerator and leave on counter, in marinade, for another 15 minutes. This brings the fish up to room temperature, making the cooking process more even.

Grill at high heat, 4 minutes on each side. Don't panic, it's supposed to be warm and pink in the middle, with great grill marks on the outside. The outside should be firm and cooked, the center juicy and melt-in-your-mouth good. Enjoy with your favorite low-cal sides, like an Asian cabbage and orange salad.
