Peanut Butter Banana Muffins

Introduction

Whole peanut butter muffins with a bit of banana. Whole peanut butter muffins with a bit of banana.
Number of Servings: 12

Ingredients

    2/3 cup peanut butter
    1/2 cup mashed bananas
    3/4 cup plain yogurt
    3 T honey
    1 tsp vanilla
    2 eggs
    1 1/4 cups sifted whole wheat pastry flour
    1/4 cup soy flour
    1 tsp cinnamon
    1 tsp baking powder
    1 tsp baking soda
    1/4 cup toasted sunflower seeds
    4 T unsweeted blackberry conserve

Directions

Preheat oven to 400 degrees Fahrenheit. Grease 12 muffins cups or line with baking cups.
In a bowl or food processor, mix together the peanut butter, bananas, yogurt, honey, vanilla and eggs.
In another bowl, combine the flours, cinnamon, baking powder and baking soda. Process or mix to combine the wet and dry ingredients. Stir in the sunflower seeds.
Half fill the muffin cups, top with a teaspoon of jam, then top with the remaining batter Bake in the upper half of the oven for 20 to 25 minutes or until rounded tops are tinged with gold and a cake tester comes out clean.
Yield: 12 muffins.
