Organic Penne Pasta with Almond Tomato Sauce

Introduction

Number of Servings: 4

Ingredients

    2 cups organic whole wheat penne pasta
    1 can (15 oz.) no salt organic tomato paste
    1 organic red (cayenne) pepper, finely diced
    1/8 tsp. sea salt
    8 large organic basil leaves
    11 dry roasted almonds, finely chopped*
    4 Tbsp Parmesan Cheese*
    * I was unable to get organic, but maybe you can :)

Directions

Cook the pasta according to package directions. Drain and set aside.
In large mixing bowl or blender, mix together tomato sauce, pepper, salt, basil, and almonds until smooth and well blended.
Place the pasta in 4 bowls and top with sauce and cheese. Serve immediately.
Makes 4 servings.
