Kashi muffins

Introduction

One of my favorite breakfasts before going to the gym. One of my favorite breakfasts before going to the gym.
Number of Servings: 12

Ingredients

    1 cup Kashi GoLean cereal
    3/4 cup wheat flour, unbleached
    2 tsp. baking powder
    I large egg
    1 tsp. cinnamon
    1/4 tsp nutmeg
    1/4 cup Sucanat (natural cane sugar)
    1/4 cup Canola oil
    1/3 cup unsweetened applesauce
    1 tsp. vanilla extract
    3/4 cup low fat milk
    1/2 cup dried sweetened cranberries

Directions

pour cereal in large bowl and add milk, let sit 20 minutes. In a separate bowl, mix flour, baking powder, sugar and spices. Add dry ingredients and rest of ingredients to cereal and milk, stirring until blended. Fill muffin tins lined with paper cups 2/3 full and bake in a preheated oven at 350 degrees for 20-25 minutes until muffins are done. Makes 12 muffins.
