Soyrizo and cabbage burrito filling (vegan)

Introduction

This was a spur-of-the-moment thing, but I liked it enough to add it to my cookbooks This was a spur-of-the-moment thing, but I liked it enough to add it to my cookbooks
Number of Servings: 5

Ingredients

    10 oz. soy chorizo, removed from casings
    1 small onion, sliced
    1 pound or so shredded cabbage (or ready-made cabbage slaw mix)
    1 can corn (I use the 11-oz can of Green Giant Niblets)

Directions

Fry first three ingredients (I use a wok) at high heat, stirring often, until the cabbage and onions are all wilted and soft. Add corn and heat through. Makes about 5 big burritos' worth of filling. (About 2.5 pounds, and use about .5 pounds of filling per burrito.)
