Heat Peanut Oil on medium high heat. Add garlic and ginger root. Cook for 1 minute. Add chicken and cook 4 minutes or until it starts to brown stirring constantly. Add onion, carrots and red pepper. Cook 2 minutes. Stir while cooking. Add snap peas and broccoli cook 2 minutes. Add soy sauce. cook 2 minutes. dissolve the corn starch in the broth. Add the mixture. Simmer 4 minutes.
