Pumpkin Pie (crustless)

Introduction

made with splenda, mostly egg-whites, fat-free/sugar-free pudding, and whole wheat flour made with splenda, mostly egg-whites, fat-free/sugar-free pudding, and whole wheat flour
Number of Servings: 8

Ingredients

    2 cups 100% pumpkin
    1 egg
    5 Tbsp Eggbeaters Egg whites
    2 Tbsp splenda
    1/4 cup brown sugar (unpacked)
    1 (1oz) package of Jell-O sugar free/fat free vanilla pudding
    3 Tbsp whole wheat flour
    1 cup water
    1 tsp cinnamon
    1/4 tsp nutmeg
    1/4 tsp ginger
    1/4 tsp salt

Directions

1. Mix all ingredients except water together
in a large bowl.
2. Gradually stir in water until well mixed.
3. Spray a 9-inch pan with cooking spray.
Pour batter into pan.
4. Bake at 350 for 45-55 minutes
or until knife inserted 1 inch from the center
comes out clean.
