Yummy Scrummy M&M Cookies

Introduction

I make this dough in batches and freeze the dough balls for later. I bake a few cookies in my toaster oven each morning for my son's lunch. My son and his friends absolutely love these cookies. Number of Servings: 60

Ingredients

    2 cups Unbleached All Purpose Flour
    1/2 cup Whole WHeat Flour
    1 cup Quick Cooking Rolled Oats
    1 cup Bran Flake cereal
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/4 tsp Salt

    1/2 cup Salted Butter
    1/2 cup Unsweetened Applesauce

    1 cup Sugar Replacer
    1 cup Brown Sugar

    2 Eggs
    1 1/2 tsp. Vanila Extract
    1 cup Mini M&M Baking Pieces

Directions

In a medium bowl, mix together flour, oats, cereal, baking powder, baking soda, and salt.

In a large bowl, beat butter and applesauce with an electric mixer for 30 seconds. Add sugar replacer and brown sugar. Beat until combined. Beat in eggs and vanilla extract. Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture. Stir in the M&M baking pieces.

TO FREEZE FOR LATER: Drop by 1 tbsp scoops onto wax paper or parchment covered cookie sheet. Place in freezer for about an hour. Remove from freezer and place in good quality freezer bag.

TO BAKE: Remove desired cookie dough balls from freezer bag. Place on cookie sheet and bake at 350 degrees for 14-15 minutes. Remove from oven. Enjoy!

Makes about 60 cookies.
