Spanish Rice

Introduction

This is really two recipes. I make rice pilaf and use the left over to make spanish rice. This is really two recipes. I make rice pilaf and use the left over to make spanish rice.
Number of Servings: 12

Ingredients

    1 lb. extra lean ground beef
    2 strips bacon, cooked and crumbled
    1 cup onion chopped
    1 cup red sweet bell pepper chopped
    1 tbsp olive oil
    2 cloves garlic (chopped)
    1 cup batsami rice
    28 oz V8 Hot and Spicy Juice
    1/2 cup shredded cheddar cheese
    salt and pepper
    1 Tbs ground cumin

Directions

Brown ground beef with onion, red bell pepper and garlic in 1 Tbs of olive oil, season with salt and pepper, add bacon (cooked and crumbled) and cook a few minutes longer. Add rice, V8 juice and cumin, bring to a boil, reduce heat, cover and let simmer for 15 minutes or until all liquid is absorbed. Stir in shredded cheese and let cool slightly, serve warm.
