Poached Salmon

Introduction

This is our family favourite. Great served with a salad and wild rice mix and vegetables. This is our family favourite. Great served with a salad and wild rice mix and vegetables.

Ingredients

    1 lb. mushrooms
    1 large onion, sliced
    2 stalks celery, chopped
    3 Salmon fillets
    1 tbsp dill weed, dried
    juice from 1/2 lemon

Directions

Arrange mushrooms and onion over bottom of a 2-inch deep skillet large enough to hold salmon in a single layer. Saute until mushrooms, onions, and celery are cooked (approximately 5 minutes). The mushrooms will produce enough liquid to poach the salmon. Arrange salmon over mushrooms celery and onions and cook for approximately 10 minutes. Squeeze lemon juice and sprinkle dill weed over salmon.

serving size is 1/2 fillet per person
