Knorr Spinach Dip with Cottage Cheese (Low Fat)

This is a lower fat version of the recipe on the back of the Knorr package. Also has a bit more protein due to the addition of cottage cheese. Ingredients

1 package Knorr Vegetable Recipe Mix
1 cup Cottage Cheese, 2% Milkfat, drained
1 (16 oz) container Breakstone's Fat Free Sour Cream
1 Tbls. Hellman's Light Mayonanise
1 package (10 oz) Spinach, frozen
Directions
Drain cottage cheese in strainer until most of the liquid is gone. Blend until smooth using a stick blender, or stand blender.
Fold sour cream, mayonnaise, cottage cheese, spinach, and soup mix until well combined.
Chill 2 hours. Serve with fresh veggies such as carrots, peppers, cucumbers.
Serving size 1/2 cup.

We had this for a snack today. I honestly can't tell the difference between the regular version and this one. :-) Enjoy!

I haven't tried this version but I make the original but I have found its better with 2 packs of spinach (heat in microwave for 8-10mins then drain very well/squeeze all liquid out) use less mayo and lil more sourcream. I use the light or no fat kind. I will def try with the cottage cheese. :) - 7/27/09

You're quite welcome! This version is slightly thicker than the regular version due to not having all the mayo. But if you feel it's too thick, you can always add a touch more to your liking. :-)
