Couscous Salad

Ingredients

    1.5 cup cooked couscous
    1 tbsp olive oil
    2 tbsp onion, white or green depending on your preference
    1 clove garlic
    4-5 strips red, yellow or orange bell peppers, diced
    1/2 cup diced butternut squash
    2-3 sundried tomatoes, sliced into small pieces
    1/4 cup reduced fat feta cheese

Directions

Prepare couscous according to package instructions. Heat olive oil in a small skillet. Add onions, garlic and peppers. Saute 2-3 minutes. Add remaining vegetables, except tomatos. Saute an additional 2-3 minutes. Add tomatos and saute for about another minute, just enough to warm the tomatos. Split in half to yield 2 servings. Sprinkle feta on top before serving.
