2 boneless, skinless chicken breasts (about 4 oz. each)
2 slices bacon
2 C frozen diced potatoes with peppers and onions, thawed
1/2 C 2% milk chredded cheddar cheese
Add chicken to skillet; cook 5 min. on each side or until done. Remove chicken from skillet; cover to keep warm. Crumble bacon into skillet. Add potatoes; cook and stir 5 min. or until heated through.
Place chicken over potatoes; top with cheese. Cover; cook 2 min. or until cheese is melted.
Makes 2 servings of 1 chicken breast and 1 C potatoes each.
