Penne with Walnut Pesto Sauce (1.5cup serving) kec

Introduction

I got this recipe from an ad for Colavita olive oil over 10 years ago, and my family just loves it. My normally picky eaters can't get enough of my "green noodles". Fresh basil sold in the supermarkets as potted plants will work fine, (not the stuff sold in the plastic clamshells), but whenever it's possible, I pick it fresh from the garden. I got this recipe from an ad for Colavita olive oil over 10 years ago, and my family just loves it. My normally picky eaters can't get enough of my "green noodles". Fresh basil sold in the supermarkets as potted plants will work fine, (not the stuff sold in the plastic clamshells), but whenever it's possible, I pick it fresh from the garden.

Ingredients

    1cup walnut pieces
    1 1/2 cup pre-washed fresh basil leaves (packed down)
    2 Tbsp grated parmesan cheese (Kraft)
    2 tsp freshly chopped garlic
    1 1/4 tsp salt
    1 cup Extra Virgin Olive Oil
    2 boxes (14.5oz each) Ronzoni Smart Taste Penne Pasta

Directions

In a 350' oven, toast the walnuts until golden brown, but not burnt (5-10 minutes).
Bring a large pot of water to a boil. Then cook the pasta.until al dente.
While the pasta is cooking, make the pesto sauce as follows: Measure the basil leaves by packing them in a cup measure until you get 1 1/2 cups. (approximate weight = 2.5oz) Rinse the basil leaves and dry using a salad spinner if available, to remove excess water. In a blender, place the basil leaves, grated parmesan, garlic, Extra Virgin Olive, and salt. Puree until completely smooth.
Taste and adjust salt if needed.
When the pasta is completely cooked, drain it and add it to a large saute pan (12") with the pesto sauce, to warm it gently and bring out the flavors.
This recipe yields 14 (1 1/2 cup servings).

I usually like to brush a bit of pesto sauce on some boneless chicken breasts to serve along side the pasta., but it would also work well with shrimp. Neither the chicken nor shrimp are figured in the nutritional information listed in this recipe. Enjoy!
