Introduction

Gluten free and dairy free, and with a lot less fat than most coconut flour recipes. Gluten free and dairy free, and with a lot less fat than most coconut flour recipes.
Number of Servings: 10

Ingredients

    4 eggs, beaten
    1/4 cup liquid sweetener of your choice (I use honey)
    1 cup unsweetened applesauce
    1/2 cup coconut flour, sifted
    1/2 tsp cinnamon
    1/2 tsp baking soda
    1/2 tsp salt

Directions

Mix wet and dry ingredients separately, then combine and whisk until no lumps remain. Pour into muffin tins lined with paper cups, and bake at 400 degrees for 12-15 minutes.

Makes 10 muffins
