Salmon and Rocket Linguine

Number of Servings: 2

Ingredients

    Atlantic Salmon, 260 grams
    Linguine, 5 oz (dry weight)
    *Lemon Juice, 1 lemon yields
    *rocket leaves, 100 gram(s)
    Cherry Tomatoes, halved, 10

Directions

Heat a pan and fry the salmon for 5 minutes skin side down. Turn and fry for another 4 minutes.
Remove from the pan and leave to cool.
Cook pasta according to the instructions,drain the pasta and keep back 1/2 cup of the pasta water.
When fish is cool enough to handle, remove the skin and flake into large chunks.
Return to the pan over a low heat.
Add the pasta and the cherry tomatoes and mix well.
Add the rocket, mixing well.
If the mixture is too claggy pour in a little of the pasta water to loosen.
Squeeze over the juice of a lemon (more if you fancy it).
Season with black pepper to taste.
Serve.
