Not Quite Aflredo Sauce

Introduction

I love a creamy sauce on my pasta but am not willing to sacrifice the calories for a creamy alfredo sauce so i decided to experiment and come up with something else that would be just as satisfying... I love a creamy sauce on my pasta but am not willing to sacrifice the calories for a creamy alfredo sauce so i decided to experiment and come up with something else that would be just as satisfying...
Number of Servings: 2

Ingredients

    4 oz uncooked whole wheat pasta
    2 oz hummus
    1/2 cup skim milk
    1 oz mozzarella cheese
    salt and pepper to taste

Directions

Boil pasta as directed on pacakge. While pasta is cooking, place a seperate fry pan over medium low heat. Pour milk into pan. Be sure to continually stir so that the milk doesn't scald. Add mozzarella cheese and simmer until melted and incorporated into mik. Add hummus and whisk together. Add salt and pepper to taste, stir, and turn temperature to low. If sauce seems too thick, add a couple tablespoonsful of the water from the boiling pasta and mix. When pasta is finished, strain and add to fry pan. Toss and serve.

Add some steamed broccoli and/or grilled chicken to make this meal complete!
