Peanut Butter Cereal Bars (1 of 32/pan) kec

Introduction

These are by no means low -cal, but one portion of a pan cut 8 x4 yielding 32 bars, is ok as an occasional treat.

Cook's note: I would not advise substituting reduced fat peanut butter in this recipe. Having tried this myself, I can say that they turn out hard as bricks. Sometimes portion control in moderation is better than a substitution.

Ingredients

    1 cup sugar
    1 cup light colored corn syrup
    dash of salt
    2 cups (1lb jar) Wegmans organic creamy peanut butter
    5 cups Rice Krispies
    1 full bag (24Tbsp) Nestle Semi-Sweet Chocolate Chips

Directions

In a large pot, bring the corn syrup,sugar, and dash of salt just to a boil, then remove from heat.
Add the peanut butter and stir until it's completely melted together with the sugars.
Stir in 5 cups of Rice Krispies cereal until completely blended. This will get a bit stiff.
Press this mixture into a cookie sheet using your hands, dipped in water to prevent sticking.
At this point you can either melt the chocolate chips on the stove or in the microwave, or simply pour the chocolate chips on top of the warm cookie mixture and allow its heat to soften the chips until you can spread them evenly over the cookie sheet.
Place the cookie sheet in the refrigerator for a few minutes to firm up the chocolate before cutting the pan into 32 squares (8 x 4). One square equals one serving.
