Used applesauce instead of oil.

Ingredients

    Coconut, unsw. med. flakes, 9 Tbsp (1/2 cup)
    Eggs, extra large, 2
    Skim Milk, .1/2 cup (125 mL)
    Applesauce, unsweetened, 1/2 cup (125 mL)
    Vanilla Extract, 1 tsp (5 mL)
    Banana, fresh, mashed, 1 cup (250 mL)
    Honey, 2 tbsp (30 mL)
    Whole Wheat Flour, 1 cup (250 mL)
    Quaker Oats - Quick 1 Minute - Dry, 1 cup (250 mL)
    Fibre One, 1 cup (250 mL)
    Salt, 1/2 tsp (2.5 mL)
    Baking Powder, 1 tsp (5 mL)
    Baking Soda, 1 tsp (5 mL)
    Pineapple, crushed in pineapple juice, 1/2 cup (125 mL)
    Flax Seed, 1 tbsp (15 mL)

Directions

1. Lightly toast coconut on a cookie sheet in the oven.
2. Measure and mix flour , Fibre One, oats, baking powder, salt and baking soda.
3. Mash banana and add to beaten eggs, milk and apple sauce. Add vanilla and honey.
4. Mix lightly with dry ingredients and then stir in flax seeds and coconut.
5. Divide into 12 muffin cups and bake at 350 for about 20 minutes.

Makes 12 large muffins.
