Blueberry Orange Muffins

Introduction

Number of Servings: 12

Ingredients

    1/4 cup Wheat Bran
    1 1/2 cup Whole Wheat Flour
    1/2 cup Granulated Sugar
    1 tbsp Baking Powder
    1/4 Salt
    1 Large Egg
    1 cup 1% Milk
    1/4 cup Canola or Vegetable Oil
    1 tsp Orange Rind OR Orange Extract
    1 cup Blueberries, fresh or frozen
    1/2 cup Chopped Nuts (optional)

Directions

Combine flour, wheat bran, sugar, baking powder & salt in a large mixing bowl. In a separate bowl, beat egg, milk, oil & orange rind together. Add liquid ingredients all at once to dry ingredients and stir until just moistened. Gently fold in Blueberries (& nuts). Fill greased or lined muffin cups almost full and bake at 375 deg F for 20-25 minutes or until the top springs back when gently touched. Makes 12 muffins.
