Chocolate Mint Pudding

Introduction

Found this recipe in AllYou magazine and modified it slightly. It is a nice light mint flavored chocolate pudding.

Number of Servings: 6

Ingredients

    3 cups nonfat milk
    2 peppermint tea bags
    1/4 cup cornstarch
    1/8 tsp salt
    1 tsp vanilla extract
    5 pieces Hershey's Sugar Free Dark Chocolate Candies

Directions

Pour 2 cups nonfat milk into medium saucepan and cook over medium-high heat until scalded. Add teabags, cover and set aside for 10 minutes.
Whisk together cornstarch and salt in large bowl. Slowly pour in remaining 1 cup of milk and vanilla, whisking to blend.
Discard tea bags, pour warm milk into bowl with corn starch and salt, whisking until well blended. Pour mixture back into saucepan and cook over medium heat, stirring constantly, until thickened(about consistency of mayonaise). Remove from heat and stir in chocolate pieces, stirring until smooth. Strain into a large measuring cup, pour into 1/2 cup ramekins or glasses and serve warm, or cover with plastic wrap(lightly press plastic wrap against pudding) and refrigerate until ready to serve. Yields 6 servings.
