Yellow Squash Casserole




Number of Servings: 6

Ingredients

    4 cups sliced yellow crookneck squash
    2 large eggs
    3 T. heavy whipping cream
    1/4 tsp. salt
    1/8 tsp. black pepper
    1 packet Splenda
    3/4 cup low fat Cheddar cheese, shredded
    1 GG Scandinavian Crispbread, processed into crumbs
    1 pat butter diced

Directions

Microwave squash slices for 15 minutes or until very tender. Mash with rest of ingredients except crumbs and butter. Pour into sprayed 8 inch square glass baking dish. Sprinkle crumbs over top and divide butter pieces equally over top. Bake at 350 degrees F. for 45 minutes. Cut into 6 servings.
