Karen's Italian Quiche

Ingredients

    Makes 4 Servings

    3 lg. Eggs
    1/2 C Egg white substitute
    1/2 C Skim milk
    1/4 C Flour
    Salt and Pepper (amount as desired)
    4 slices of bacon
    20 Basil Leaves
    1 C Broccoli
    1 Tsp. Garlic
    1 Small Onion
    1 Med. Tomato (cut into slices)
    1/4 C. Part Skim Mozzerrella Cheese



Directions

Set oven to 400 degrees. Use 9-10 inch round pan and spray with non-stick spray.

In bowl whisk together eggs, egg whites, milk, flour, salt and pepper. In separate, non-stick skillet (spray skillet with non-stick spray) and on medium heat saute broccoli (tips only, don't use stems) garlic, onions, and basil. When all veggies are tender, remove from heat and add to egg mixture. In microwave, cook bacon until crispy and then crumble pieces into egg and vegtable mixture. Pour egg mixture into pan. On top place slices of tomato and add mozzerrella cheese. Bake for 30 minutes.
