Grilled Island Chicken

Number of Servings: 4

Ingredients

    1 lb. skinless chicken breast, sliced thinly
    1 8 oz. can pineapple tidbits with juice
    3 cloves fresh garlic
    1 tbsp. soy sauce
    1/4 cup brown sugar, packed
    1/4 tsp. ground ginger

Directions

Put sliced chicken breast into a heavy duty zip-top plastic bag.

Add remaining ingredients to food processor or blender, blend until smooth.

Reserve 1/4 of marinade for dipping.

Add remainder to bag with chicken and coat well.

Marinate in refrigerator for 1 to 4 hours.

Spray grill pan or gas grill with cooking spray. Heat to med high, grill chicken 5 to 7 minutes per side (or juices run clear) . Remove from grill, let rest for 5 minutes and serve.
