Black Bean Dip

Number of Servings: 4

Ingredients

    1 can black beans
    1/4 cup water
    1 tsp cumin
    1 Tbsp chili powder
    1 tsp cayenne pepper
    1 tsp Goya Adobo (low sodium if you can find it)
    1/3 cup salsa
    1/2 cup shredded 2% cheddar cheese
    1/2 cup green onion - diced

Directions

Drain and rinse beans. Heat beans over the stove; add water, cumin, chili powder, and adobo. Once the beans are heated through, about 10 minutes or so, move to an oven-safe dish. Sprinkle top with cheese. Use broiler setting in the oven to melt the cheese.

Once the cheese has melted, top with salsa and fresh tomatoes. Garnish with diced green onions. Put sour cream or avocado on the side, if desired. Serve with tortilla chips, pita chips or cut veggies.

Makes 4 servings.
