Lentil Soup

Introduction

Cost friendly soup that will taste even better the next day. Cost friendly soup that will taste even better the next day.
Number of Servings: 8

Ingredients

    8 cups cold water
    2 cups dried lentils
    6 whole cloves
    2 bay leaves
    2 onions, sliced or chopped coarsely
    1 8-ounce can diced tomatoes
    4 stalks celery, chopped coarsely
    2-3 carrots, sliced
    3-4 garlic cloves, minced or pressed
    black pepper, to taste
    Ham or bacon (fried and broken into bits), optional
    1-2 cubes beef bouillon, optional
    1 Tablespoon cider vinegar

Directions

Bring water, lentils, whole cloves and bay leaves to a boil, cover, reduce heat and simmer for 1 hour.
Then, add all other ingredients (except cider vinegar), and simmer for 45 minutes to 1 hour, stirring occasionally.

Finally, add the cider vinegar, stir, and serve.
