Mock Wild Rice

Ingredients

    1 cup white rice
    1 tablespoon olive oil
    2 t better than bouillon beef
    3 cups water
    1 small can mushrooms (pieces and stems okay), drained and rinsed
    1 medium onion, cut into slices or chopped coarsely

Directions

Preheat oven to 350F.

Put all ingredients into a covered dish. Stir. Bake at 350F for 60 minutes. Remove from heat and serve.
