Nana's Banana Bread

Introduction

I loved my old recipe so I had to find a way to make it healthier. I cut the shortening and sugar in half and used whole wheat flour for half of the flour. We love it! Number of Servings: 12

Ingredients

    1/4 cup Crisco
    1/2 cup sugar
    1/2 cup Splenda
    1/3 cup applesauce, unsweetened
    2 eggs
    3 medium bananas, ripe and mashed
    2 tsp. vanilla extract (I use vanilla nut)
    1 cup whole wheat flour
    1 cup flour
    1 1/4 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    1/2 cup pecans

Directions

Preheat oven to 350.

Cream together Crisco, sugar and Splenda. Add in applesauce, eggs, and vanilla and mix well. In a separate bowl combine all dry ingredients and stir. Add dry ingredients to banana mixture and blend well. Add pecans and stir. Pour into large loaf pan (use non-stick spray on pan) and bake at 350 degrees for one hour.
