Ingredients

    8 boneless skinless chicken breasts-halved to make 16
    1 t. salt
    1 t. pepper
    1 T. olive oil
    1 c. chopped onion
    4 garlic cloves, minced
    1 lb. fresh mushrooms, quartered
    2 - 11 oz cans condensed tomato bisque soup, undiluted
    3/4 c. vegetable broth (red wine can be used and it's even better, but higher in calories) Vegetable broth is about 11 calories per 3/4 c. and red wine is 134 per 3/4 c. for calorie calculations.
    1 t. dried basil
    1 t. dried oregano
    1 6 oz can black olives, sliced

Directions

Sprinkle chicken with pepper. In a large skillet, heat oil over medium high heat. Cook chicken 8 minutes. Turn chicken; add onion, garlic and mushrooms. Cook 8 minutes longer or until chicken juices run clear.

In a bowl, whisk together the soup, broth (or wine), basil and oregano; pour over chicken in skillet. Cover and simmer 5-10 minutes or until heated through. Garnish with black olives.

Serve over rice or noodles and with a green salad.

This recipe also works great for freezing half for later use.
