Number of Servings: 20

Ingredients

2 Cups Cucumber, peeled, seeded, shredded and squeezed
3/4 Cups Vegetable oil (I use EVOO)
    3 large eggs
    1/4 tsp Vanilla
    1/4 tsp Crushed fresh ginger
    3 Cups all purpose flour
    1 1/2 Cups sugar
    1 tsp baking soda
    2 tsp baking powder
    3/4 tsp salt
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg

Directions

Prepare cucumbers and set aside, let drain in colander then squeeze out extra juice before mixing with other ingredients

Mix all dry ingredients in one bowl and all the wet ingredients in another then mix all together

Spray an 8x4 loaf pan with non stick baking spray and pour mixture in loaf pan

Bake at 350 degrees for about an hour then drop temperature to about 325 degrees for an additional 15-20 minutes or until toothpick comes out dry.

Remove from pan and let cool on wire rack. Slice into 10 thick slices (approx. 1" thickness) and then slice each in half.

Makes 20 servings
