Blender Waffles

Introduction

The original recipe was for pancakes, but I make them in our Belgian Waffle maker, thus the number of servings is low and the size is high.

I also use olive oil instead of veg. oil so I get the good fats in my diet.

Number of Servings: 5

Ingredients

    3/4 cup wheat
    1 C. milk
    1/4 tsp salt
    1/2 tsp vanilla
    2 eggs
    1/2 C. olive oil
    2 tsp baking powder
    1/2 tsp lemon juice

Directions

Blend wheat and milk for a good 4 minutes. Add salt, eggs and oil. Blend for 1 minute. Add baking powder and blend until mixed. Cook.

  • made these last night for dinner! YUM! Only problem is our waffle maker broke so I made the 2nd batch into pancakes. :( I am going to try coconut oil instead of olive oil - 9/7/09
