Baked Zucchini Quiche

Introduction

This can also be a side..My sister gave me this recipe to use up the insane amount of zucchini we have been getting....The original recipe called for 1/2 cup oil...I eliminated it entirely to keep it lighter...I also added jalapeno peppers! Ingredients

    3 Cups thinly sliced zucchini, 1/2 c grated cheese, 1 cup heart smart Bisquick, 1/2 - 1 cup chopped onion, 1/2 tsp - 1 tbsp oregano, 2 tsp - 1 tbsp chopped fresh parsley, 1 clove minced garlic, 4 beaten eggs or 1 cup egg beaters.....(original recipe called for 1/2 cup olive oil...I eliminated it from the recipe to keep it lighter)

    Optional ingredients: 1/2 tsp seasoned salt, jalapeno peppers (amount depends on desired heat!)

Directions

Preheat oven to 350. Mix all ingredients. Pour into a greased 13 x 9 baking dish. Bake 30 -45 minutes, until golden brown.
