Sweet & Sour Turkey Meatloaf

Introduction

This creation started out as a weight watchers recipe for sweet and sour meatballs. When it came time for me to roll the 48 little balls, I decided a loaf would be much better, and quicker.

Ingredients

    1 spray cooking spray
    1 1/2 pound raw extra lean ground turkey or any ground meat combo
    3/4 cups rolled oats
    2 large egg whites
    1 cup onion, finely chopped
    1 medium garlic clove, minced
    2 tbsp dried parsley
    2 tsp dried oregano
    8 oz canned tomato sauce
    2 tbsp Splenda
    3 tbsp mustard, spicy brown
    1 1/4 tsp chili powder
    1/2 tsp hot pepper sauce



Directions

Preheat oven to 350F. Spray baking dish with cooking spray or line with aluminum foil.
In a medium bowl, combine turkey, oats, egg whites, onion, garlic, parsley and oregano; mix thoroughly. Shape mixture into loaf; place on baking dish.

Combine remaining ingredients in a small bowl. Poke deeps holes in the meatloaf. Pour about half of the sauce over loaf and spread over the top and sides.

Bake for 30 minutes, pour the rest of the sauce over the loaf. Bake for an addition 15-20 minutes or until cooked thoroughly.
