Almond Turkey and Rice

Introduction

This a recipe I found at Kraft Foods, was Almond Chicken and Rice, I substitued turkey thighs. I also think 1 cup rice is too much, would be better with 1/2 cup. Ingredients

    Two Turkey Thighs about a pound
    1/4 cup KRAFT Light Italian Dressing
    1-1/4 cups fat-free no sodiumchicken broth (I make my own)
    4 cloves fresh garlic
    16 oz oriental veggie mix
    1 cup white rice, cooked with 2 cups water
    1/4 cup almonds, toasted, divided

Directions


COOK Turkey in 2 Tbsp. dressing and olive oil in large nonstick skillet on medium heat 4 min. on each side or until evenly browned.

STIR in broth, garlic and remaining dressing; bring to boil. Cover; simmer 5 min or until chicken is done (165F). Remove turkey; cover to keep warm.

ADD broccoli to skillet; cook, uncovered, 3 min. Stir in rice and 3 Tbsp. nuts. Remove from heat; cover. Let stand 7 min. Serve turkey over rice; top with remaining nuts.
