Macaroni Salad

Introduction

mom's recipie made a little healthier mom's recipie made a little healthier
Number of Servings: 8

Ingredients

    2 cups uncooked Elbow Macaroni
    4 eggs (hardboiled)
    8 tbsp Fat Free Miracle Whip
    1 can Chicken of the Sea Solid White Albacore Tuna (drained)
    1/3 Cup Green Onions (diced)

    salt and pepper to taste (opt)

Directions

Cook and Drain Macaroni. Hard boil eggs. Once cool combine all ingrendients and chill until ready to serve.

serves 8 (about 1/2cup each)

*Can be made healthier by using whole wheat pasta, leaving out a couple egg yolks or adding some diced celery (that also stretches the servings a little so you can feed a couple more people!)

  • This recipe was a great! I just made a few changes since I didn't have some of the ingredients: I used whole wheat rotini pasta (about 1/4 cup, uncooked), Hellmann's reduced fat mayo instead of light, and I added 1/2 can of drained tuna. I ate it over 1 1/2 cups romaine lettuce for dinner! Yum! - 4/28/07
